Turn it up.
Done cooking?
Turn it off.
No waiting around for coals to cool down.
No bag of charcoal sitting in the garage.
No ash everywhere.
No wondering whether the charcoal is actually ready or whether it still needs another ten minutes.
It isn’t romantic.
It isn’t dramatic.
It just works.
And sometimes that’s exactly what I want.
But then someone says, “You don’t get the same flavor.”
Okay.
This is where the argument becomes more interesting.
Because there actually is a difference between gas and charcoal cooking.
